Chef-owner John Singer, who started his apprenticeship in 1985, uses elaborate technique and artful plating to showcase seasonal produce at its finest. From meeting at Harvey's in South Yarra to opening The Rocks at The Mornington Yacht Club, and selling wine for some of the best wineries in Australia, Dominique's experience and expertise are evident in the restaurant's impeccable service and ambiance.
